A simple, deeply flavourful tomato sauce that improves with time. Great for pasta, pizza, or as a base for other dishes.

Heat olive oil in a heavy-based saucepan over medium heat. Add onion and cook for 8–10 minutes until soft and translucent.
Add garlic and cook for 1 minute until fragrant.
Pour in the canned tomatoes. Add sugar and oregano. Season generously with salt and pepper.
Bring to a simmer, then reduce heat to low. Cook uncovered for 25–30 minutes, stirring occasionally, until thickened.
Use as-is for a rustic sauce, or blend smooth with a stick blender. Taste and adjust seasoning before serving.
