Ingredients (serves 2)

  • 2 slices Sourdough bread
  • 1 Ripe avocado
  • 2 Eggs
  • 1 tbsp White wine vinegar
  • Chilli flakes, to taste
  • Salt and pepper

Instructions

    Bring a wide saucepan of water to a gentle simmer. Add the white wine vinegar.

    Toast the sourdough slices until golden and crisp.

    Halve and pit the avocado. Scoop the flesh into a bowl, season with salt and pepper, and mash with a fork.

    Create a gentle whirlpool in the simmering water and crack in the eggs one at a time. Poach for 3 minutes for a runny yolk.

    Spread the mashed avocado onto the toast, top with a poached egg, and finish with chilli flakes.
