Ingredients (serves 4)

  • 8 Chicken thighs, bone-in
  • 1 Lemon, juice and zest
  • 4 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tbsp Fresh rosemary, chopped
  • 1 tbsp Fresh thyme

Instructions

    Combine lemon juice and zest, garlic, olive oil, rosemary, and thyme in a bowl. Season well.

    Score the chicken thighs and place in the marinade. Cover and refrigerate for at least 30 minutes (or overnight for best results).

    Heat a grill or griddle pan to medium-high. Grill the chicken skin-side down for 8–10 minutes until the skin is crispy and charred.
